According to Longman it has two meanings:
1-to buy something immediately, especially because it is very cheap:
We put the cheap shirts out for sale this morning and people snapped them up in only a few minutes.
امروز پیراهنهای ارزون رو حراج کردیم و مردم در عرض چند دقیقه همه رو قاپیدند
2-to eagerly take an opportunity to have someone as part of your company, team etc:
Michael Owen was snapped up by Liverpool before he'd even left school.
