This is my suggestion.
a fulfilling job
is a job that gives you fulfillment, which would mean that it doesn't just provide you with money, it gives you other things
like a sense of purpose
so if you are a teacher and you really believe teaching is socially important and you enjoy seeing your students learn,
then that job would be fulfilling
whereas a demanding job
basically means a difficult job,
it could be physically difficult so it makes you exhausted, or it could be complicated and stressful
or it might just have long hours and take up a lot of your time
it means it demands a lot of you
so you have to give a lot of yourself to it
often a job might be both fulfilling and demanding
but other times it might just be demanding and you don't really think it serves a higher purpose or gives you much reward besides the money
